Sausage and Broccoli Rabe

imageI saw Mario Batali make this on the Chew and I’ve made it a few times. It is amazing and pretty easy to make. There are 3 options to the recipe – simple, special or spectacular, with each one having more ingredients and adding a bit more flavor and complexity. I’ve substituted Swiss chard for the broccoli rabe and Parmesan for the¬†caciocavaolla. I’ve also used a dark chocolate balsamic vinegar which tastes amazing.
