The feta, pine nuts and spinach make this so yummy. I found this makeover recipe in a magazine and have made it many times. This isn’t a weeknight meal as it takes awhile to cook and prepare. It’s a little hard to follow on the magazine page, so I retyped it to simplify it.
I saw Mario Batali make this on the Chew and I’ve made it a few times. It is amazing and pretty easy to make. There are 3 options to the recipe – simple, special or spectacular, with each one having more ingredients and adding a bit more flavor and complexity. I’ve substituted Swiss chard for the broccoli rabe and Parmesan for the caciocavaolla. I’ve also used a dark chocolate balsamic vinegar which tastes amazing.
