I used this as inspiration for a dish I made last night. I cooked the butternut squash ahead of time in the microwave, skipped the brown sugar, added pineapple juice since I had some in the fridge, used basil instead of cilantro since that’s what I had, and used a hot curry spice. I served it over brown rice. Was delicious!
I saw Mario Batali make this on the Chew and I’ve made it a few times. It is amazing and pretty easy to make. There are 3 options to the recipe – simple, special or spectacular, with each one having more ingredients and adding a bit more flavor and complexity. I’ve substituted Swiss chard for the broccoli rabe and Parmesan for the caciocavaolla. I’ve also used a dark chocolate balsamic vinegar which tastes amazing.
